In the northern hemisphere we have officially crossed the hump into summer. It’s all baseball, watermelon and eating outdoors from now until September.
When the grocer put peaches on sale the other week, I knew grilled fruit was about to commence. I also had this song in my head, which probably played a role in my decision making process.
Sweet-glazed grilled peaches, serves 4
Ingredients:
2 large peaches, washed, pitted and cut into quarters
juice of 1/2 a lemon
3 Tbs. honey or maple syrup
1 tsp. vanilla & 1 tsp. bourbon (or use bourbon vanilla extract. I found it a Trader Joe’s)
1/4 tsp. ground ginger
Method:
1. Combine all the glaze ingredients. If you don’t like bourbon don’t use it. Same goes for the ginger. Pour it over the peaches and let them marinate for an hour. If you had tough/hard peaches like I did, stab the fruit with a fork so the peaches absorb the flavors.
2. Grill for 3-5 minutes on either side. Remove when the fruit has grill marks/is soft and pliant.
3. Serve with vanilla ice cream.
