Adult with a sunburn.

I am an adult with a sunburn. Does that sound absurd to anyone else? I’m sure getting a sunburn probably breaks rules in that handbook they give you when you turn 18. You know the one that also says here’s a voter’s ballot, a pack of cigarettes, a release form to appear in a porno, an American flag and a gun.

OK, so maybe I haven’t had the best day. Mistakes at work and not applying enough sunscreen make me cranky.

I got home and spent some serious time with a bottle of aloe and took a nap. Woke up and remembered I had two slices of rye bread and a few blue cheese crumbles, which does not a dinner make. Off to the store in shorts and a long-sleeved shirt, why show the world the fact that I am an adult with a sunburn. Most absurd day ever.

Did I mention I was wearing a cap-sleeved blouse today? I have pearly white shoulders.

At the store I remember I needed soap/body wash/shower gel/whatever they call it now. After locating the proper aisle, I am faced with a choice: smell like a fruity dessert or an ocean breeze? When did soap stop smelling like soap? I bet it was the 90s. Everything started to get X-treme (yes, spelled that way) when I was kid. And eventually that trend made its way into the soap department, where you can now choose between smelling like mango chutney and a Tahitian waterfall.

I need a drink. … And maybe another.

Dinner was simple, a salad of broccoli slaw, avocado and blue cheese with a side of pineapple. I’m not turning on the stove with a sunburn.

Moving on. I made pasta bolognese the other day. It was lovely and comforting and so flippin’ easy. All the thanks goes to my co-worker Bethany who rattled off her recipe one day at work and which I recreated with what I had in the fridge.

Pasta Bolognese, makes 6 servings

IMG_0971Ingredients

1 pound ground beef (I don’t buy a lot of meat, but when I do I usually go for lean 90/10 grass-fed. Or, if I’m a week away from pay day whatever is on sale)

1 jar (24 oz) pasta sauce (I used Walmart brand. It was plain marinara with chunks of veggies in it)

1 medium carrot, grated

3 to 4 cloves garlic, grated

1/4 to 1/2 onion, chopped

1 tsp. balsamic vinegar, plus more to taste

3/4 small can of evaporated milk

salt and pepper to taste

1 pound dried pasta of your choice

Method

1. Brown ground meat and break up into small pieces. Add carrot, garlic and onion. Cook until onions are translucent, about 7 to 10 minutes.

2. Add whole jar of pasta sauce, vinegar and evaporated milk. Season to taste, adding more vinegar, milk or S&P to fit your likes.

3. Cook pasta according to directions on box. I used campanelle, which is a short and fluted pasta. I like it because the bolognese sauce clings to the little ridges.

IMG_09694. Drain pasta and add to sauce. Stir to coat the pasta and serve with a heavy garnish of fresh herbs.  I used cilantro because I’m crazy about it, but parsley would be awesome too.

  1. Aloe Vera is commonly used to treat sunburn. As well as providing soothing relief, it may also assist in the healing process. Apply to the affected areas as needed. Although the gel extracted directly from an aloe Vera plant works best, if you don’t have ready access to one, you may use an ‘over the counter’ Aloe Vera Cream that contains the gel. For this to be effective, just ensure that the cream contains a high concentration of Aloe Vera than it does water or other solutions.;
